Adding hydrogen to a polyunsaturated oil in thr presence of a nickel catalyst at 60 degrees celcius. In the process some of the double bonds are saturated.

When the double bonds are saturated to form single bonds, the carbon chains can align with each other so the intermolecular forces are stronger increasing the melting / boiling points
