In a gas the particles are very far apart, which means that gases can easily be squashed (unlike solids and liquids). Gases spread out to fill the shape of the container and can be poured as they have very weak intermolecular forces. A substance is a gas at room temperature if its boiling point is below 20 degrees centigrade.
